Flamingo
Las Vegas is pleased to announce plans to open the first West Coast location of
the high-energy Mexican eatery Carlos’n Charlie’s. The restaurant and bar will
make its debut this April.
Located
adjacent to the Race & Sports Book, Carlos’n Charlie’s will span more than
13,000 square feet serving lunch and dinner nightly. The dining room will boast
seating for 150, and a unique outdoor terrace will overlook the lush Flamingo
pool and gardens complete with oversized umbrellas and cooling misters, accommodating
an additional 150. The large bar will seat up to 40 guests bringing the venue’s
full seating capacity to 340, with additional space for gathering and dancing.
Carlos’n
Charlie’s opened its first location in Acapulco, Mexico in 1970, immediately
attracting tourists and locals alike with its great food, loud music and
party-like atmosphere. The concept quickly caught on, and there are currently
11 Carlos’n Charlie’s locations throughout Mexico. The fun, laid-back
restaurant concept was created by Grupo Anderson, the team behind Mexico’s
tourist hot spot, Señor Frog’s. In 1994, Carlos’n Charlie’s made its U.S. debut
and is now making its way to the West, to the heart of the Las Vegas Strip.
Positions
are open now for Carlos’n Charlie’s – the new Mexican cantina opening inside
Flamingo Las Vegas this April.
The
restaurant is hiring nearly 200 positions from servers and cooks to bar backs
and hostesses.

The
food menu will offer a wide variety of authentic Mexican favorites such as
tacos, burritos, chimichangas, enchiladas, fajitas and other traditional
Mexican fare. Guests can also create their own tableside guacamole with
Carlos’n Charlie’s interactive guacamole cart, for the perfect unique blend. A
selection of American favorites such as Chipotle BBQ ribs, burgers and spicy
chicken wings will also be offered.
The
restaurant will offer a casual setting where guests are free to unwind and
encouraged to dance to the tunes of the ’70s, ’80s and current hits of today.
Partygoers will enjoy an extensive bar menu featuring margaritas, sangria and a
lengthy selection of signature cocktails including the Paloma, a tequila-based
libation with grapefruit soda topped off with a salt-rimmed glass.
