Balla Italian Soul inside SAHARA Las Vegas announces an array of new seasonal dishes and cocktails. Guests are invited to savor several tempting new antipasti options as well as a savory new signature pasta. These bright, fresh offerings stemming Italy’s diverse culinary traditions join the destination’s notable menu created by James Beard Award-winning Chef Shawn McClain.

Spring Misto – Butter lettuce, peas, spicy salumi, ricotta salata
Grilled Lamb Sausage – Almonds, charred eggplant, snap peas, mint
Baby Artichokes – Alla Romana, mint, lemon
Steamed Mussels – Pancetta, preserved lemon, green garlic butter
House-made Pasta
Rotolo – Rabe, green garlic, pecorino, morels
Cocktails
The Show Girl – Tito’s Vodka, Sakura Vermouth, coconut cream, Barolo Chinato
Paloma Bianco – El Jimador Tequila, Bitter Bianco, grapefruit, agave nectar, lime
Regalita – Oxley Gin, prickly pear, Carpano Bianco, ginger beer, butterfly pea tea
Italian Summer – Italicus Rosolio, Dry CuraƧao, Lillet Blanc, lime, strawberry, sparkling wine
“As different ingredients come into season, we always look forward to introducing new dishes to the menu to mix it up and keep the experience enticing for our guests,” said David Grates, general manager, Balla Italian Soul.
Balla Italian Soul is now open nightly for dinner service from 5 to 10 p.m.
