Pancho’s Mexican Restaurant, located in Downtown Summerlin, is getting the spring fiestas started with light and refreshing flavors in the new Pancho’s Punch cocktail as well as new salad options, available now.
The newest fruity creation from the best Mexican restaurant in Downtown Summerlin is crafted with Patrón tequila, triple sec liqueur, pineapple juice and raspberry purée topped with a splash of Sprite. Pancho’s Punch is the newest addition to the restaurant’s collection of cocktails including the popular “Naughty Maggie,” Pancho’s signature margarita made with Campo Azul and a float of Grand Marnier as well as more than 40 brands of tequila.
In addition to the arrival of the Pancho’s Punch cocktail, the restaurant has introduced new salad options with a Mexican twist to its regular menu, such as the ensalada Caesar, featuring crisp romaine lettuce topped with toasted pumpkin seeds, parmesan cheese and tortilla strips, tossed in a creamy Caesar dressing, available with grilled chicken breast or shrimp. Another salad ideal for the warmer weather is the ensalada de mango y pollo featuring grilled chicken breast atop a bed of mixed greens, toasted pumpkin seeds, sliced grapes and jicama tossed with citrus honey vinaigrette and finished with sliced mangos and cotija cheese.
Pancho’s also offers brunch on the weekend with popular Mexican breakfast dishes such as chilaquiles verde, shredded chicken and tortilla strips simmered in fresh tomatillo sauce with grated cheese and sour cream and served with black beans sprinkled with Mexican cotija cheese. All brunch items include a complimentary glass of champagne for guests 21 years of age or older.
