Chef Kerry Simon can now welcome Las Vegans “home” with the new Carson Kitchen,
officially open inside the old John. E Carson Hotel at 124 South 6th St. in
Downtown Las Vegas.
“I’m
psyched that Carson Kitchen is finally open,” said Simon. “The overwhelming
positive response means so much to me and I look forward to it becoming a
staple in the downtown dining scene.”
Chef
Simon partnered with restaurateur, Cory Harwell, and executive chef, Matt
Andrews, to combine worldly gourmet flavors with the hip vibe of Downtown and
an infusion of his own signature personality. Carson Kitchen uses locally-based
ingredients to create an approachable menu, with all items under $20, along
with a comprehensive drink collection of small-batch brews, global wines and
microbrewed old-school sodas.
The
1,800-square-foot dining room seats up to 60 guests with a design inspired by
Chef Simon’s own loft-style home in Las Vegas, complete with repurposed wood
and steel from the old hotel and an interactive chef’s table bordering the
kitchen. Carson Kitchen is also scheduled to introduce a 910-square-foot
rooftop patio which will host live music and offers skyline views of the
surrounding city along with a lush six-foot-tall garden wall and granite
full-service bar.
