Ferraro's Italian Restaurant Adds New Light Summer Menu Items!

Summer in the desert brings flavorful, light new menu offerings paired with crisp, refreshing wines at Ferraro’s Italian Restaurant and Wine Bar. New standing options, together with featured specials that will vary nightly, join all of guests’ favorites on Ferraro’s summer menu.

Fresh summer produce figures prominently in dishes like Zucchini Pizza, topped with zucchini, cherry tomatoes, ricotta, Pecorino Romano and extra virgin olive oil, as well as Pollo o Vitello Sorrento, which features chicken breast or veal scaloppini accompanied by eggplant, fresh mozzarella, fresh herbs and white wine tomato sauce.

A variety of new summer pasta dishes feature seasonal vegetables, such as Gnocchi e Piselli, which pairs house-made potato dumplings with fresh peas, pancetta and cherry tomatoes, and Rigatoni Toscano, with homemade pasta, broccoli rapini, homemade Calabrese sausage, Calabrese peppers, cannellini beans, olive oil and garlic. Another summertime favorite – fresh, Safe-Harbor® seafood – makes an appearance in Penne con Gamberoni, starring homemade pasta, shrimp, zucchini, sun-dried tomatoes, pine nuts and tangy ricotta salata. Seafood lovers will also crave Fettuccine Mare Monte, featuring jumbo lump crab meat, mixed mushrooms, fresh herbs, white wine and finished with a drizzle of olive oil.

In addition to the new menu items, guests dining at Ferraro’s during the summer can look forward to nightly specials such as chilled soups, dishes made with figs and fava beans and—an Italian summer delight—delicately stuffed and fried zucchini flowers.

To complement these summer dishes, guests can choose a refreshing accompaniment to dinner from Ferraro’s incomparable wine list. The restaurant carries a robust selection of the best Italian white wines, including Sauvignon Blanc, Pinot Bianco, Moscato d’Asti and sparkling Prosecco. Or, select a glass of Ferraro’s unique and ever-changing house-made sangria, made with chilled white wine infused with ingredients such as fresh cantaloupe and honeydew melon, chamomile grappa and fresh mint.
