The
inimitably elegant Andre’s Restaurant & Lounge at Monte Carlo is known for
its exquisite, award-winning French fare. With their new spring and summer
menu, Chef Andre Rochat and Chef de Cuisine Chris Bulen offer guests more
seasonal choices, enhanced flexibility and the chance to compose their
individualized idea of the perfect meal—whether that means selecting two or
three dishes from the à la carte menu or indulging in Andre’s full tasting
menu.
With
its expanded menu of soups, salads, entrees, side dishes and more, guests with
busy summer itineraries can dine in approximately one hour when selecting
dishes from Andre’s new spring and summer à la carte menu. New menu selections
include steak, seafood, chicken and pork that may be accompanied by one of the
chefs’ specialty sauces and paired with sides such as vegetables, potatoes and
risotto. Highlights of this menu include:
Cold
appetizers – shrimp cocktail with mustard and cocktail sauces; beef carpaccio
with arugula, parmesan and espelette aïoli; chilled lobster timbale with
avocado, lemon crème and citrus jus
Hot
appetizers – escargots de Bourgogne, served with garlic butter and herbs;
scampi Andre with basil and Pernod cream sauce and fleuron; pan-seared duck
foie gras with pistachio beignet, peach compote and black currant reduction
Salads
– iceberg wedge with croutons, lardons and white balsamic vinaigrette; Caesar
with tête de moine fleuret; pear and Roquefort phyllo with lolla rossa and
pistachio vinaigrette
Soups
– soup du jour; lobster bisque with lobster and corn-stuffed sweet pepper;
French onion soup with Swiss Emmental Gruyère, au gratin
Main
courses – grilled 10 oz. center-cut rib eye (USDA Prime); grilled 8 oz. filet
of beef; grilled salmon; seared jumbo scallops with lemon caper sauce; spring
chicken Riesling chicken jus with petite vegetables; 16 oz. pork chop with
mustard pickle sauce
Side
dishes – green asparagus anglaise, sautéed mushrooms, sautéed spinach,
broccolini and onion rings
Starch
– macaroni and cheese with smoked duck breast, pommes purée, Anna potatoes,
vegetable risotto, pommes frites and sautéed fingerling potatoes
In
addition, a number of specialties spotlighting some of the season’s best
ingredients grace the spring and summer menu, including heirloom tomato salad
with burrata cheese, melon and pickled golden beets; chilled white asparagus
soup with parmesan tuile and fresh herbs; pappardelle pasta with white wine
sauce, braised rabbit and spring vegetables; and potato crusted sea bass with
black truffle emulsion, truffled pasta, white asparagus and parsley coulis.
“We
have guests who run the gamut—from those looking to spend the evening with that
once-in-a-lifetime dining experience, to those on a tight schedule because
they’re running to a show,” says Joseph Marsco, general manager, Andre’s. “In
addition to the new offerings, we still feature a full tasting menu as well as
Andre’s classic, composed dishes.”
These
classics include imported Dover sole sautéed Veronique, Grenobloise or
amandine; 2-lb. Maine Lobster Thermidor, served with brandied cream sauce,
mushrooms, tarragon and asparagus anglaise; pan-seared duck breast and duck
sausage with spiced mango and duck jus, rissole of potato and artichoke, endive
and duck prosciutto timbale.
