at the Top of the Palms Casino Resort is pleased to present a spring tasting
menu rich in “superfoods”—foods rich in omegas, anti-oxidants and other
nutrients that help foster and maintain healthy bodies and minds. Everyone from
the evening news to the family physician is abuzz about the importance of
healthful ingredients in slowing the body’s aging process and fostering its
regenerative potential. Inspired by this movement and propelled by his passion
for delectable culinary creations, Alizé’s Chef de Cuisine Mark Purdy has
crafted a selection of dishes proving fine dining can be healthful while still
delighting the palate:
Chilled
Vichyssoise and Tomato Soup – This starter is garnished with crispy potatoes
and minced chives. Tomatoes are rich in the anti-oxidant lycopene, which can
help protect cells and other bodily structures from harmful, oxygen-free
radicals.
Roasted
Mushroom Toban-Yaki – As a second course, this miso-mushroom broth is laden
with gluten-free rice noodles and accented with sesame oil. Mushrooms are high
in the antioxidant selenium and are extremely high in potassium—even higher
than bananas. Potassium helps the body process sodium and lower blood pressure
and is beneficial for people with hypertension or a high risk of stroke.
Market
Greens Salad – An organic blend of 15 greens and florals, custom-created for
Alizé by Boulder City, Nev.’s Herbs by Diane, it includes everything from pea
shoots, sunflower greens and violet leaves, to green butter lettuce, sorrel and
edible flowers. This beautiful salad also incorporates carrots, fennel,
cucumber and asparagus along with a lemon-and-olive-oil vinaigrette. Its
ingredients are packed with beta-carotene, fiber and iron as well as
cancer-preventing vitamin E and cholesterol-reducing monounsaturated fats.
Sautéed
Dutch White Asparagus – The fourth course stars this delicate spring vegetable
accompanied by leek purée, green onions and sunflower-seed granola. Asparagus
is an excellent source of fiber, as well as the vitamins K, B folate, C and A.
Sunflower seeds contain beneficial fatty acids that can help remove the plaque
that can form low-density lipoproteins (LDL) in blood vessels, thereby reducing
the risk of heart attacks and strokes.
Sautéed
Tofu – This protein-packed main course is punctuated by tamarind-glazed
vegetables, dried fruit and Marcona almonds. Tofu is rich in isoflavones, which
help balance hormonal levels in women and can be helpful in preventing and
lowering the rate of breast, prostate and colon cancers. The tart, acidic
tamarind fruit is high in cancer-fighting antioxidants, has mild laxative
properties and helps lower cholesterol. Meanwhile, Marcona almonds are high in
heart-healthy monounsaturated and polyunsaturated fats, which lower blood
cholesterol levels.
“By
offering these menu items alongside more traditional fine-dining fare, I hope
to demonstrate that imaginatively prepared healthful food can be just as
special as more traditional haute cuisine,” said Purdy. “As more and more
people—myself included—seek out healthful foods, I feel a responsibility to
offer palate-pleasing dishes full of ingredients people can truly feel good
about.”
