Following the successful menu
relaunch of the Los Angeles Sushi Roku locations, Innovative Dining Group (IDG) unveiled a new menu on September 14 at Sushi Roku Las Vegas,
showcasing novel and innovative signature dishes. Guests will find new
additions to the lunch, dinner, and happy hour menus, including Salmon Sashimi
Carpaccio with Black Truffle (shaved tableside); Kobe Meatballs in Lettuce Cups
with mustard soy truffle sauce; Albacore Tacos “Roku Style”; and the Ume
(six-piece) and Matsu (eight-piece) Roku Signature-Style Sushi Creations.
Two of the most celebrated
new dishes on the re-styled menu are the Ume
and Matsu Signature-Style Sushi plates, featuring six or eight individual
pieces of nigiri-style sushi, crafted with accoutrements that complement each
fish’s flavor profile. The Ume Signature Style Sushi features Japanese Sea
Bream, Scottish Salmon, Japanese Yellowtail, Seared Albacore, Bluefin Tuna, and
King Crab. The Matsu Plate includes the Ume
selections and the addition of Seared Bluefin Tuna and Santa Barbara Sea
Urchin. Sushi Roku’s new menu continues to highlight innovative, globally
inspired Japanese cuisine, while expanding its offerings to include a new
selection of dishes made with the finest fish from around the globe and other
exceptional ingredients. Executive Sushi Chef Hiroshi Shima has spent four
decades perfecting his craft, and oversees the teams of experienced sushi chefs
at each Sushi Roku restaurant. His formal training reinforces traditional
technique, but he frequently applies flavors from a variety of influences,
incorporating nontraditional ingredients such as JalapeƱos from Latin America, French Black Truffles, and Italian cheeses into his
offerings.
In addition to Sushi Roku, IDG operates BOA Steakhouse at the Forum Shops at Caesars Palace. The company also operates seven of the most popular
and successful restaurants in Los Angeles: Sushi Roku (with locations in West
Hollywood, Santa Monica, and Pasadena), BOA Steakhouse (with locations in West Hollywood and Santa Monica), Katana
in West Hollywood, and Robata Bar in Santa Monica. IDG also has a presence in Scottsdale with a Sushi Roku restaurant at the W Hotel. Their
