No Cooking For The Holidays! Try Mercadito At Red Rock

Don’t want to cook for Christmas or hit the madness of the Strip for New Year’s Eve?  Mercadito at Red Rock Resort, celebrates the holiday season with special menu items for Christmas dinner and New Year’s Eve packages to close 2015.  For Christmas, guests can enjoy Skillet Chicken Mole Poblano (cilantro cream rice and escabeche, watercress, carrot and radish salad) for $18 and Roasted Canela Peach Bunuelos (pistachio ice cream, spiced cream and chipotle cajeta) for $10.  The Blanco Mexicano, a Mexican twist on the white Russian, is available throughout the month of December for $11.

For those looking to end 2015 on a spicy note, Mercadito offers two seatings for New Year’s Eve. All guests can enjoy the Mercadito New Year’s package – a sharing experience like no other, specially tailored to the party table-side.  An amazing way to experience Mercadito and the multitude of flavors on the menu, this experience is $100 per person, including all food and cocktails and is designed for the entire table. It includes 3-hours of open bar featuring all of Mercadito’s signature cocktails, as well as select beer, wine and all well-drinks, no shots are included.  For the early birds, seatings 3 – 7 p.m. are available, early seating is limited to three hours from the reservation time. Formed by lead vocalist and guitarist Robert Smith, The Cure released its debut album Three Imaginary Boys in 1979 to great acclaim just one year after signing with Chris Parry’s new label, Fiction Records. Over the years, The Cure became known for its change of sound, ranging from punk and goth rock to pop and electronic dance music. In addition to its sound, the band also experienced a changing lineup with band members constantly leaving and returning to the group. After more than two decades with its original label, The Cure decided to leave and sign with international label Geffen Records in 2003. Designed to appeal to a young audience, the band released its first album for Geffen and followed it up with a North American tour featuring a number of younger bands including Interpol, Mowai, The Rapture and Muse. Over the next couple of the years, The Cure played at various festivals around the world until taking a break in 2008. After a three-year hiatus, the group began touring again and playing at festivals in Europe, North America and South America. In 2014, lead singer Smith announced that The Cure would release a new album, a follow-up to the 4:13 Dream album, as well as begin a new tour, playing three of its earlier albums in their entirety.

In 2009, pianist, composer and arranger Scott Bradlee created Postmodern Jukebox when he started uploading videos of himself playing pop hits in a ragtime style to YouTube. Bradlee’s videos began to go viral when award winning novelist Neil Gaiman tweeted about them to his millions of Twitter followers. Since then, Postmodern Jukebox has transformed into a rotating group of performers who cover modern pop hits with a vintage twist. Over the last seven years, Postmodern Jukebox has acquired 1.5 million subscribers and more than 315 million views on YouTube. The group has covered artists ranging from Lady Gaga and Katy Perry to The Strokes and The White Stripes. In November 2015, the group will kick off its North American tour followed by a European tour in early 2016.

After several years of working in radio at various stations, Cyberkid found his way to Las Vegas and has been DJing in the city’s most extravagant nightclubs ever since.

"Music is life, and I am living" are the words that best describe John Cha's passion and love for music. Cha describes his style as high energy, fun, creative, technical and interesting. California-native DJ Stephi K developed a passion for music of all genres during her childhood. She’s performed live at venues throughout Southern California and starred in her own music video, “Play It Back.” DJ Stephi K now calls Las Vegas her home and continues to excel in the music industry with a confident attitude and strong presence that sets her aside from competitors.

San Francisco-native Nathaniel Morse has quickly risen to the top of the Los Angeles music scene. Best known as DJ Morse Code, he is an open-format DJ who makes audiences forget the meaning of genre. On any given week, you can find Morse headlining gigs anywhere from Hollywood nightclubs to East Side dance parties. DJ Morse Code also makes regular appearances in New York, Chicago, Miami, Portland and Las Vegas. His impeccable ear and serious technical skills have earned DJ Morse Code international acclaim and the respect of many reputable figures in the DJ world.

DJ Impulse
Jan. 22 and 23 from 9 p.m. to 3 a.m.

With over 10 years of experience, DJ Impulse has achieved more than most in his field. After learning to play drums at the age of five, his love for a beat drew him to hip-hop where he immediately took notice of the DJ. At age 14, he asked for a set of turntables and the rest is history. Impulse began DJing house parties and completed his first club gig before he was old enough to legally get in the door. His popularity grew, winning him jobs with numerous artists including Wu Tang Clan, Funkmaster Flex and Ludacris. Currently working with Scratch Academy out of New York City, DJ Impulse has taken to commanding parties for corporate sponsors such as Red Bull, Scion and Saks Fifth Avenue. He performs sets ranging from ‘70s and ‘80s classics to mash-up parties with rock and rap, funk and R&B, rock, alternative and more. DJ Impulse spins a variety of genres and makes them blend perfectly.

DJ David Clutch

Raised in Las Vegas, David Clutch started his musical journey at a very young age. In addition, Billy Zane made his first-ever appearance at the nightclub on Friday, Dec. 18. The Titanic actor was there to celebrate the birthday of a friend.

Looking For The Perfect Wine For The Holidays? Help By Paula Moulton


The Perfect Wine to Bring to a Holiday Gathering: It's All About the Food

I became infamous at Le Cordon Bleu in France (at least in my own mind) on a relatively quiet and peaceful classroom day of wine tasting. I am on stage but the theater is a dimly lit classroom in the 15th Arondissement of Paris and I am an American widow with three grown children wearing a uniform that matches my nine other youthful women classmates. Can I succeed at performing the international protocols of a flawless 7-minute wine analysis that ends with a perfect food and wine pairing while standing in front of my peers, professor and the man from Margaux?

With a grimace, and a bit of pride, I always think back to this life-changing moment in the spring of 2012 when I was preparing for intensive wine exams. After studying ten months in Paris at Le Cordon Bleu's first year of wine management, I still had my doubts about performing the 7-minute wine analysis and, if given the choice, would rather have performed the 7-minute AB workout even if it entailed wearing my spandex shorts in front of my other twenty classmates.

My classmates snickered, but I think they were secretly happy that I broke the traditional standards of food and wine pairing that day. It certainly opened the doors to the steps I follow when it comes to choosing the perfect wine for holiday gatherings.

The internationally accepted rules of a wine tasting analysis chronicle in detail the visuel, or visual; olfactif or aromatic; and gustatif or taste of a particular wine, analyzing the future of the wine in terms of age, serving temperature, whether to carafe or decant, and finally, what dish to pair with the wine—all in 7-minutes or less. And the key ends with unlocking the door to choosing the correct wine for your meal.

I hold the glass of 2009 Chateau Kirwan Bordeaux in my hand like a singer ready to begin a melody. “This bouncy and forward 2009 Bordeaux from Chateau Kirwan, which is predominantly Cabernet Sauvignon blended with Merlot, Petite Verdot, and Cabernet Franc,” I exclaim, “could be paired with a lovely garlic-rubbed grilled leg of lamb served with roasted rosemary potatoes and sautéed green beans with toasted pine nuts . . .”

Monsieur Professor is proudly smiling at me and begins to clap with my other nineteen classmates and the man from Margaux.

“Or,” I sheepishly announce over the first seconds of applause, “it could be paired with a thin-crusted pizza covered with caramelized onions, crispy pancetta, sautéed shitake mushrooms, and Gorgonzola cheese.”

The clapping stops abruptly, “Why you do that!” Monsieur Professor shouts at me after my offbeat pairing suggestion. “You just gave perfect wine analysis and then ruined it by your food pairing . . . pizza, mon Dieu, not with Chateau Kirwan from Margaux!”

I genuinely want that bottle of Chateau Kirwan from Margaux with pizza. Ce n'est pas chouette (that's not cool) for a traditional French food and wine pairing but for me, an American, it is.

I suggest using my basic pairing principles—that so abruptly disturbed my French classroom that day—to explore and have fun with food and wine pairings during the holidays. By matching a wine that’s either similar or opposite to the dish or ingredients being served, you can produce delectable and unique pairings. It's all about the personal adventure when it comes to food and wine pairing.

I pair wine using a simple technique that I learned from a famous sommelier in France. "Wine pairing should be looked at like we look at couples,” he shared. “There are two types of couples in this world. There are the couples who are similar to one another and make each other whole almost like being one person and then there are the couples who are completely opposite and one would never put them together."

Yet both couples work together and form a powerful bond...
1. Is this wine similar to the dish?
Ex: A heavy beef stew with lots of pepper and bay leaves would have flavors similar to a peppery, earthy red wine like a Cabernet Sauvignon or a spicy Pinot Noir. The bold aromas and flavors of the wine are similar to the strong and spicy ingredients in the stew.
2. Is this wine opposite to the dish?
Ex: A creamy white sauce over pasta would pair well with a nice Sauvignon Blanc. Why?

The acidity in the wine is opposite from the creamy, smooth sauce and actually subdues and balances both flavors.

In pairing traditional holiday dishes, use the basic concepts above (try on your own first) and if you get stumped here are some cheat notes:

Turkey (Dark Meat): Merlot, Zinfandel
Turkey (Light Meat) Chardonnay, Pinot Noir, Viognier
Chicken: Beaujolais, Chardonnay, Pinot Noir, Riesling, Rioja
Lamb: Bordeaux Blend, Cabernet Sauvignon, Merlot
Salmon/Seafood/Shellfish: Chardonnay, Riesling, Sauvignon Blanc, Pinot Noir
Pizza: Bordeaux Blend, Merlot, Cabernet Sauvignon, Syrah, Zinfandel, Sauvignon Blanc
Macaroni & Cheese: Chardonnay, Sauvignon Blanc, Rioja
Hamburgers: Merlot, Rose, Zinfandel, Syrah

Be bold, brave and thankful that your pick does not include the man from Margaux. Simply take that adventurous wine leap believing that your personal palate will always catch you. And even if your palate fails you with the hours of thought you put into that special holiday food and wine pairing, who cares, try again later. Toss out the old ideas about failure and embrace it as your best friend because, when it comes to wine, there is always another chance to get creative with another even more provocative pairing.

South Point Celebrates 10 Years! Budweiser's Clydesdales Coming!


South Point Hotel, Casino & Spa, owned and operated by Michael Gaughan, celebrates its 10th anniversary in 2016 as one of Las Vegas’ top hotels offering the world’s premier equestrian facility, 11 award-winning restaurants, Las Vegas’ only professional bowling tournament facility and nonstop entertainment for both locals and visitors alike.

“There have been so many changes in Las Vegas, from the opening of many exceptional establishments to the end of an era for some properties, shows and legendary icons, all which have molded Las Vegas into the remarkable city it is today,” said Ryan Growney, general manager of South Point Hotel, Casino & Spa. “We are honored that South Point continues to make an impact in the community, and we look forward to more exciting things in what we anticipate to be a long and bright future.”

Since opening, South Point has become home to some of Las Vegas’ most memorable events, dining facilities, performances and more. In preparation for its 10th anniversary, South Point highlights moments in history that have helped the property make its stamp on the Las Vegas blueprint:

1.       South Coast Becomes South Point Hotel, Casino & Spa
It began when Michael and Paula Gaughan had a dream to open a hotel property that would cater to the Western lifestyle group, creating a place within the bustling city of Las Vegas where cowboys and cowgirls could gather and feel at home. But where did the name come from? Gaughan claims he changed the name to South Point because he only had to change three letters from Coast to Point.

2.       Las Vegas’ Premier Gourmet Dining
Las Vegas’ original fine dining establishment, Michael’s Gourmet Room, originally opened at Barbary Coast Hotel and Casino in 1982. Following the opening of South Point Hotel, Gaughan opened the iconic restaurant in 2007. Not wanting to change the original atmosphere, the iconic doorframe and rose budded ceiling were installed to continue the tradition of a true vintage, intimate and gourmet setting that the restaurant is nationally renowned for. Many celebrities have made Michael’s Gourmet Room a regular place to dine but you will never know who unless you dine there yourself.

3.       Jerry Lewis Telethon
Good friends with Jerry Lewis, Gaughan brought the Jerry Lewis Telethon to South Point Hotel from 2006 to 2011. The telethon was hosted by actor and comedian Jerry Lewis in an effort to raise money for the Muscular Dystrophy Association.

4.       The Division of Race and Sports Books
The race and sports book are two separate worlds in Michael Gaughan’s eyes. When opening South Point, Gaughan wanted to ensure guests would get the best of the betting world by offering a Race Book with nine windows and a separate Sports Book with 12 windows. South Point was and still remains the only Nevada property with a separate Race and Sports Book.

5.       Benny Binion Becomes a Resident
For the price of $1, Benny Binion’s statue moved into the South Point Hotel in 2008. Weighing in at 3,000 pounds, Gaughan had a hole carved into the side of the property to install the statue into its new home.

6.       Steak ‘N Shake Joins the Team
For over five years, South Point has played home to many firsts, one of the most popular being the first Steak N’ Shake on the West Coast. In addition, it is the only location in Las Vegas. Since making a home here, Steak N’ Shake has served over 2,624,160 burgers and 1,474,005 milkshakes, making it the highest earning Steak N’ Shake in the country.

7.       Las Vegas’ First Professional Bowling Tournament Strikes
Adding another first to the list, South Point Bowling Plaza, a $35 million bowling tournament facility, rolled into town in October 2014 introducing Las Vegas to its first professional bowling tournament facility. Gaughan secured a 12-year deal with United States Bowling Congress (USBC), Las Vegas Events (LVE) and the Las Vegas Convention and Visitors Authority (LVCVA), which scheduled 122 days in 2015, 210 days in 2016 and 310 days of tournament operations in 2017. The facility, a spacious 90,000-square-foot facility, features 60 lanes with two parallel rows of 30 lanes, a 360-seat viewing area, a 720-unit locker room and a 350 seated squad room equipped with a team photo booth area, stub lane, ball check station and bracket room.

8.       First Casino to Host a Game of Blackjack for a Budweiser Clydesdale and Dalmatian
Known for hosting some of Las Vegas’ most unique events, it only seems natural to host a special game of Blackjack for some of its most unique guests. In October 2012, Gaughan, Growney sat down with the Budweiser Clydesdale and Dalmatian for an afternoon of Blackjack. Yes, it is a hotel for cowboys, but it doesn’t stop there. South Point and the Gaughan family have had a relationship with Budweiser dating back to the late Jackie Gaughan. Over the years, more than 400 Clydesdales have made reservations in the South Point Arena.

9.       Vegas Cowboy Central Becomes Home to Three Arenas
Already the premier equestrian facility in the world, South Point Arena grew in 2014 from one arena to three fully transitional arenas. The expansion project, dubbed the Priefert Pavilion, brought an additional 100,000 square feet to the existing space totaling more than 240,000 square feet to for arena events. Since the installation of the new arenas, South Point has booked 42 weeks of the year to events making it home to some of the most unique Equestrian events in the country including, National Cutting Horse Association events, Arabian Breeders World Cup, American Quarter Horse Association events, National Barrel Horse Association, Cowboy Mounted Shooting Association’s Western U.S. Championship, Indian National Finals Rodeo and the World Series of Team Roping

10.   South Point Employees Celebrating a Decade at South Point
South Point employees are as dedicated to the property as Michael Gaughan is to his employees. In addition to honoring the start of South Point’s 10th anniversary, 831 employees will also be honoring a decade of working for the hotel.
