Jennifer Cuevas
The Gluten & Grain Free Gourmet supports delicious eating that is gluten, grain, soy, and poultry free. Jen Cuevas experienced her own journey to wellness by eating this way, and desires to share the message that life can still be delicious!

In the time since her diagnosis, Jen has spent a lot of time learning. She was treated by Dr. Glen Aukerman (author: Better Health in 120 days) and attended all of his classes to understand the medical aspect of how various foods affect gluten sensitivity. After further health issues inspired her to do more research, Jen went completely grain and soy free in 2012, and became a certified coach under the direction of Gluten Free Society. She uses her own health journey to coach and inspire others to consider dietary changes as a way to achieve optimum health. In 2013 she established a support group, and found that food availability continued to be the biggest barrier to success. She began developing food products that support a grain-free, soy-free and even dairy-free lifestyle; many items are allergy-friendly and are free of refined sugars. She also offers allergen-free Communion to churches, raising awareness about the effects of gluten exposure.

She recognized her daughter's grief process through her support group background as a teenager. After the unfortunate death of her older brother, Nikki's mother became a regional leader for Compassionate Friends, a national support group for bereaved families, when Nikki was only 11 years old. Nikki went on to become a youth peer support group leader by 14 years of age. Her presentation to the NC State Board of Education helped open the door for peer support groups throughout Middle and High Schools across the state. She carried on this legacy as an adult by chartering R.O.C.K. (Raising Our Celiac Kids) for Charlotte, NC in 2009. Her positive approach to the journey of dietary change makes each event a celebration of community wherever they are held.

NASCAR From My Experience! I LOVED It! You Can Too In 2016!

The Pit where refueling and tires are replaced

The Big Haulers that are used transport the cars

The NASCAR experience! The all American sport that has beautiful sleek fast cars with motors that hum with power going over 180 miles per hour, what is not to like about this sport? Every year one of the biggest highlights of Las Vegas is the week in March when NACSAR madness takes over the city and culminates with the Kobalt 400. Race enthusiast from around the world flock to our fair city to not only have fun but to watch this thrilling sport and to take part of the events leading up to Sunday’s big race; Boyd gaming sponsors the event and at many of their properties fans had the opportunity to meet their NASCAR heroes up close and personal. Legendary driver Jeff Gordon Driver of the No. 24 Pepsi Chevrolet SS appeared at The Orleans and thrilled fans who had the chance to meet him and over at the Fremont Hotel Carl Edwards, Driver of the No. 19 ARRIS Toyota had his personal appearance event.

Driver Jimmie Johnson of the No. 48 Lowe's/Kobalt Tools-sponsored Chevrolet SS pitched in for Habitat for Humanity and helped frame a house for a local Las Vegas family. Gee that would be nice, “Yes I live in the house that NASCAR Championship winner Jimmie Johnson built!” But seriously all of the drivers make appearances and use their championship status for various charity events.

The Las Vegas Motor Speedway is located 15 miles northeast of the Las Vegas Strip and is an astounding 1,200-acre complex of multiple tracks for motorsports racing. On race week-end the RV’s both small and uber luxurious park in the infield and on the upper rim to BBQ, drink, and trade NASCAR stories. If you truly want the NASCAR Las Vegas experience rent an RV and settle in for race week-end!  Be a true VIP NASCAR and go for the:

NASCAR tires
If staying in an RV is not your style many hotels have travel packages that include NASCAR features and can be found on the LVMS website - www.lvms.com/tickets/nascar_weekend/. But let’s get back to why NASCAR is so much darn fun!  Fast cars and handsome guys with nerves of steel competing to cross the finish line first and see the checkered flag, what is not to like about that? Your average every day car weighs somewhere between 3,000 to 3,500  pounds, a NASCAR car with the driver who must weigh in before race time, just like a jockey, must weigh  3,300 pounds.  The rules account for a muscular NASCAR driver weighing 140 pounds to equal the 3,300 pounds, well we will just have to take their word for it that NASCAR drivers are that light but I guess it all averages out.  If they do not weigh in before race time, yes they are penalized, just ask Driver Tony Stewart who was penalized in Daytona for failing to weigh in and no he was not a happy driver about it!  Back to the cars, the NASCAR cars; the average car compact style has 130-150 HP and a mid-size family car has 160-180 HP and a large/luxury car has 265-330 HP.  NOW a NASCAR has 860-900 HP.  They can reach a top speed of 200 mph! This was reduced from top speeds of 230-240 after a series of serious accidents took place in the 1980’s. Oh yes and of course the tires, a NASCAR tire has no tread so you might find it difficult to drive on a regular street, but on the track going at such high speeds the tires and the asphalt are both so hot they stick together.  Science as it finest!  So you tell me which car would you rather own? I know which one I would rather own, yes the NASCAR!

As the cars race around the track the only way that I can describe the sound is the hum of power; the hum of powerful engines with cars racing at close to 200 mph that makes the ground shake. Like an army must sound as they race towards their target.

This year’s race was a heartbreaker for Driver Kasey Kahne as he had contact with Carl Edwards off Turn  with less than 75 laps to go. Could you keep your cool going 200 mph and being bumped and then staying on track? That is why these drivers are such amazing athletes.

Jimmie Johnson car in the Neon Garage for repairs
Our hometown boys the Busch boys were not in this year’s race so our next favorite was Jimmie Johnson who ran into his own problems and his car ended back in the Neon garage for a quick fix and he was back into the race but finished 41st . The winner of this year’s race was Driver Kevin Harvick who drives a Chevrolet SS, which you can buy at any local Chevrolet dealer but your Chevy SS will have a mere 415 HP.

If you are a NASCAR fan then you must experience Las Vegas during our NASCAR week, if you are a woman who loves fast cars you will LOVE NASCAR! In all honesty NASCAR week-end in Vegas is the place to be and it is probably for the best that traffic after the race is bumper to bumper or we all might be driving our own NASCAR race home.

Tickets for NASCAR 2016 are now on sale and can be purchased here - www.lvms.com/. Plus keep in mind that there are events going on every month at the LVMS - www.lvms.com/tickets/schedule/.

Iconic Riviera Hotel Looks Back With #RivFacts With Dolly Parton

With its doors closing to the public Monday, May 4, 2015, the renowned Riviera Hotel & Casino is counting down its final weeks with a look back at some of the highlights, fun facts, celebrity sightings and rarely-seen photos that have helped build the iconic stature of the Las Vegas Strip’s first high-rise hotel and casino.

Week three of #RivFacts celebrates country music superstar Dolly Parton, who signed a three-year deal with the renowned property in 1980, becoming the Las Vegas Strip’s highest-paid entertainer, at $350,000 per week. The line to purchase her tickets stretched throughout the property, wrapping the length of a football field from the Versailles Theatre through the casino and into the shopping corridors.

While Parton’s debut was postponed at the Riviera Hotel & Casino due to her filming commitments with “The Best Little Whorehouse in Texas,” her show became a hit, and during her 1981 performances, she added a touch of royalty to the Versailles Theatre with a drawbridge and lavish castle set created by famed designer Bill Morris.

Retired Star Athlete Enjoys Dining In Vegas! Who? Where?

It Was A Battle But Driver Jay Beasley Drives To Victory At LVMS

Jay Beasley enjoyed a happy homecoming at The Bullring at Las Vegas Motor Speedway on Saturday night.

The Las Vegas native drove his No. 27 NASCAR Super Late Model car to victory in the 60-lap feature race on O’Hanley Memorial Opening Night while on a break from his full-time NASCAR K&N Pro Series East ride. The nine-race night kicked off the 3/8-mile track’s 2015 NASCAR Whelen All-American Series that will extend into October and honored the memory of long-time Bandoleros team owner Jim Hanley, who passed away in the offseason.

Beasley, the Super Late Model 2013 season champion, was all smiles after climbing out of his car at victory lane.

“It just feels great to come back home and have some fun with the crew, family and friends,” he said. “I love The Bullring, and I love Vegas. I couldn’t thank everyone enough for coming out to support me.”

The race was slowed by a smattering of cautions, but the restarts did not faze Beasley.
“Actually, I really enjoy restarts,” he said. “I like controlling the pace, and there’s just something about not spinning your tires while trying to get the car to hook up and get a good start. I really enjoy that.”

Chris Trickle, the nephew of former NASCAR great Dick Trickle, led early, but blew the engine in his No. 70 car on the ninth lap while rounding turn four. Five-time and defending champion Scott Gafforini battled back after losing part of his hood in the same wreck to finish second in his No. 38 car.

Defending NASCAR Grand American Modifieds champion Jason Irwin got into a groove early and picked up win No. 1 of the 2015 season in his class’ 35-lap feature with a new car. Vinny Raucci Jr., led early, but settled for second place.

“Chris Bray and the boys built me a brand new car this year, and it’s a rocket ship,” said Irwin, who travels from Albuquerque, N.M., to race at The Bullring. “I thought we’d be strong with a new car and thought we’d have more shakedown, but it was good.”

Court Connell took the lead in the NASCAR Bombers’ 25-lap feature, then held off Aaron McMorran for the second half of the race to cross the line first. McMorran tail-grabbed Connell’s bumper down the stretch, but could not make the pass and finished .315 seconds behind.

“He had me worried, and I’m sure he put some dents in my bumper,” Connell said of McMorran. “I was sitting in the lineup and got a little hungry, and the game plan became to go and get some food. I saw my brother over there eating all the food, and so I wanted to get the race over with so I could go get some food.”
Peyton Saxton qualified sixth for the USLCI Legend Cars’ 20-lap feature, but the 16-year-old quickly moved to the front in his No. 10 red, white and blue car before holding off Nick Halen at the end. Saxton won the Legend division’s Pro class last season and has started 2015 off on the right foot.

“We didn’t qualify too well, but the car ran great and was really fast,” Saxton said. “I was able to get through and run to the front real quick. That race was really fun, and it’s always great to have lots of cars out there.”

Dylan Nobile claimed the 30-lap USAC HPD Midget feature ahead of Cody Jessop in a race that included a red flag after Jeff Kelley came to rest on his roof after a frontstretch wreck with Jesse Love.

“I just tried to make my move early and stay out in the lead and try to get a rhythm going,” Nobile said.

Ian Anderson of Las Vegas was dominant in the 20-lap USLCI Thunder Cars feature, finishing .269 seconds ahead of 2014 class champion Chris Bosley. Anderson navigated his No. 21 car from the back of the seven-driver field to claim yet another victory at The Bullring.

R.J. Smotherman of Pahrump, Nev., kicked things off by leading the night’s first race from start to finish and claiming the 12-lap USLCI O’Hanley’s Bandolero Bandits feature in his No. 24 car, 2.8 seconds clear of defending Bandolero Bandits season champion Dezel West. Las Vegas’ Kyle Jacks followed with a victory in the 12-lap USLCI O’Hanley’s Bandolero Outlaws feature in his black No. 4 car after holding off a challenge from Mason Sargent.

NEXT RACE – Saturday, April 4 – NASCAR Whelen All-American Series. The Bullring's concession stand offers $2 hot dogs, $2 Coca-Cola products and $3 Budweiser beer on each NASCAR Whelen All-American Series race night.

For more information on all events at Las Vegas Motor Speedway, please visit www.LVMS.com and follow LVMS on Facebook and Twitter.

GRAND OPENING Coming For Rick Harrison's Pawn Plaza!

In anticipation of the summer 2015 grand opening, Rick Harrison, owner of Pawn Plaza, has announced his first three tenants today: Rick’s Rollin Smoke BBQ and Tavern, Poutine Vegas of Ontario’s Smoke’s Poutinerie and Rita’s Italian Ice. Poutine Vegas will serve an exclusive Poutine menu with its Signature Gravy, Fresh Hand-Cut Fries, Squeaky Cheese Curds and an unlimited combination of toppings like double-smoked bacon, flat iron steak, grilled chicken, caramelized onions, sautéed peppers and many more mouthwatering options. Rita’s Italian Ice, will feature custom Italian ices frozen custards, and Rick’s Rollin Smoke BBQ and Tavern is a Harrison family favorite. Rollin Smoke BBQ is known worldwide for their “Arkansas Style” southern hickory smoked BBQ meats and their “Hand-Rubbed” and Ole Hickory Pits smoked goodness. The restaurant will feature signature sandwiches and smoked meats, homemade sides and competition style BBQ ribs. The upstairs Tavern will overlook the Las Vegas Strip and will pour up to 16 beers on tap.

Rick’s Rollin Smoke BBQ and Tavern will be split over both levels with the Tavern being located upstairs. Vegas Poutine and Rita’s Italian Ice will be located on the first floor/lower level of the Plaza along with two to three other tenants and perhaps as many as eight to ten tenants upstairs on the second level. All three of these tenants are “first on the Strip” locations. Additionally, this marks only the second Smoke’s Poutinerie in the United States. Live entertainment on weekends in the rooftop Tavern will be a highlight of the Plaza.

Pawn Plaza is located at 725 Las Vegas Boulevard So., just south of the World Famous Gold & Silver Pawn Shop, home to HISTORY’s “Pawn Stars.”  The Cubes housing each tenant are being produced by Xtreme Manufacturing with leasing by Cushman & Wakefield/Commerce.  There will be 72 Cubes combining for 36 structures and up to 16 retail spaces as well as four restrooms.  Many of the tenants will take up more than one Cube.  Pawn Plaza will be approximately 6,000 square feet of retail space and 6,000 square feet of balcony/patio space that will benefit greatly from the more than 4,000 visitors to the pawn shop each day due to the television show’s popularity.

“I couldn’t be more excited to see this development come to fruition.  It is extremely rewarding to be a part of the revitalization of downtown Las Vegas and provide locals and tourists more reasons to return to the 700 block of the Strip,” said Rick Harrison.

A summer grand opening celebration will be planned with a myriad of festivities with all four Pawn Stars in attendance. Pawn Plaza is expected to host quarterly events and partner with different non-profits to continue the philanthropic efforts originated by the Pawn Stars when they jettisoned to success just two months into their inaugural season.
