ALIZÉ At The Top Of The Palms Resort Casino Celebrates Riesling With Special 5th Annual “Riesling Week” Menu
During the week of July 26 through Aug. 1, Chef André Rochat of the Michelin-awarded Alizé at the Top of the Palms marks “Riesling Week,” a celebration of the diverse Riesling’s from Germany , Austria and Alsace with a special menu.
Regarded among the top white wine varieties, Riesling wines can range from seductively fruity to bone dry. European varieties are clearly influenced by their place of origin and are perfect for food pairing.
For one week only, Chef Rochat presents an exclusive dinner with Riesling wine pairings that perfectly showcase a number of Riesling styles by the glass. Alizés “Riesling Week” special dinner is priced at $65 per person.
“Sommeliers have long known that Rieslings are uniquely suited for flavorful food pairing,” said Chef Rochat. “They are a lighter weight wine and perfectly complement fish and chicken.”
Rochat’s “Riesling Week” menu features smoked salmon and ratatouille roulade or phyllo wrapped anjou pear and roquefort cheese salad paired with a Riesling from Austria . Also enjoy either sautéed arctic char with king crab ravioli, red lentils and creamed leeks or roast chicken breast with crispy potato croquant, leeks, smoked bacon wrapped coq a vin paired with a 2004 Riesling from the Alsace region in France. The meal is topped off with a Peach Melba Soufflé perfectly-paired with a German Riesling that is ideal for balancing and enhancing the dessert experience.
