Join In The James Beard Culinary Experience At The Edge Steakhouse

Westgate Las Vegas Resort & Casino is honored to announce its culinary team, including representatives from Edge Steakhouse, Fresco Italiano and award-winning Pastry Chef, has been selected to cook at the prestigious James Beard House in New York City. To celebrate the selection, the property is offering a James Beard Culinary Experience sneak peek on Monday, January 23, 2017 from 6 p.m. to 8:30 p.m. inside Edge Steakhouse.

Available for $125 per person, the evening will include a mouthwatering Five-Course Tasting Menu and wine pairing, as well as passed champagne and appetizers, including Salmon Belly Crudo, Porcini Mushroom Bisque, Bone Marrow, Beau Soleil, Oysters, Fennel Sausage & Pepper Arancini and Grilled Lamb Chop Peperonata with a 2007 Dom Pérignon Brut Champagne. FIRST COURSE

Baby Beet Salad with Marcona Almonds, Humbolt Fog and Watercress, paired with a 2014 Orin Swift, Prisoner Zinfandel.

SECOND COURSE

Sea Scallops with Cannellini Beans, Kale and Winter Truffle, paired with a 2015 Clark and Telephone Belle Glos Pinot Noir.

THIRD COURSE

Sunchoke Agnolotti with Trumpet Royals, Parmesan and Mirco Arugula, paired with a 2013 Orin Swift “Mannequin” Chardonnay.

FOURTH COURSE

Snake River Farms Strip Loin & Ribs with Potato Puree, Creamed Swiss Chard and Bordelaise, paired with a 2013 Silver Oak Alexander Valley Cabernet Sauvignon

FIFTH COURSE

Chilled Winter Fruit Soup with Calamansi Sorbet and Mandarin Tuile and a Chocolate Passion with Passion Fruit Banana Mousse and Pecan Brittle, paired with a 1985 Warre’s Vintage Porto.
