List Of Upcoming Events At The Cosmopolitan


The Cosmopolitan of Las Vegas invites guests to celebrate Chinese New Year and welcome the Year of the Monkey with a traditional ‘Dotting of the Eyes’ ceremony, performances by world-class artists, festive cocktails and dishes from José Andrés’ China Poblano and daily gaming drawings.

On Sunday, Feb. 14 at 2:15 p.m., the resort will hold its annual ‘Dotting of the Eyes’ ceremony at the East Side entrance off Las Vegas Boulevard. During the ceremony, performers will ‘awaken’ a dragon and lions by dotting their eyes with red paint. Once awakened, the twisting and turning dragon will lead a parade of lions and dancers throughout the casino floor. The moving celebration will make a stop in front of Queue Bar for a ‘Collecting of the Cabbage’ ceremony.

Chefs José Andrés and Garrison Price honor the Year of the Monkey at China Poblano with a festive menu featuring Chinese dishes and specialty cocktails inspired by the mischievous, curious and clever spirit of the monkey. The menu will showcase an array of festive dishes including Zhu Da’s Yu Yin with cured quail egg yolk, caviar and rose wine; Vegetable Jiaozi with seasonal vegetables, soy seasoning and cilantro dough; Leaping Over the Dragon’s Gate with crispy snapper fish, scallions and ginger; Zhū Què with whole quail and dragon fruit; Wealthy Pork Noodle with braised pork belly, hand-pulled noodles and pickled carrots; Gem of China with whole abalone and superior congee and Choy Sum with oyster sauce and black bean crumbs.

Guests can pair each inventive dish with one of the restaurant’s specialty crafted cocktails. Highlights include the Monkey King served with dragon fruit and lychee infused baijiu, jasmine tea syrup, yuzu and Belgian wheat ale; Journey to the West crafted with gin, lemongrass-ginger syrup, butterfly pea tea and lemon juice; Green Tea Sour infused with green tea whiskey, St. Germain, lemon and egg white; and Golden Rice prepared with mijiu and Ti Kuan Yin oolong tea syrup perapina. To close out the celebratory feast, China Poblano serves up its Sweet Life dessert; a black sesame flan topped with lychee sorbet and caramelized walnuts.
