Mercadito's At Red Rock Says Come By For Some Tacos! For Charity!

This September, Chef Kim Canteenwalla of Andiron Steak & Sea, Made L.V., Honey Salt and Buddy V’s Ristorante, brings a his love for fresh and exciting flavors to Mercadito at Red Rock Resort as part of Mercadito Hospitality’s national Tacos for Strength campaign.  Las Vegans can indulge in Chef Canteenwalla’s Salt & Vinegar Chicken Oyster Taco during dinner for $16.50 (four per order).  A percentage of the proceeds will benefit Share Our Strength and its programs to fight childhood hunger.

For September, Chef Canteenwalla unveils his Salt & Vinegar Chicken Oyster Taco featuring crispy chicken oysters, jicama-radish slaw, habanero and cilantro crema, and shaved nectarines served in a warm flour tortilla.  “My inspiration is simple,” said Canteenwalla. “The chicken oyster is a hidden gem of the bird, my favorite part. At Made L.V., we love Salt & Vinegar flavor on our crispy chicken wings so we decided to add this fun flavoring to the taco. We added habanero and cilantro crema for some spice; jicama and radish for freshness and crunch; and nectarine for a sweet, yet tangy finish.”
Chef Canteenwalla’s experience can be described as nothing short of diverse. As chef-owner, along with his wife, restaurateur Elizabeth Blau, of the award-winning popular locals restaurant Honey Salt in west Las Vegas, Canteenwalla gets to create inspired dishes with a focus on seasonal ingredients and a farm-to-table approach. On the world-famous Las Vegas Strip inside the Grand Canal Shoppes at Venetian|Palazzo, he takes the helm as executive chef of Buddy V’s Ristorante where he’s partners with Buddy “The Cake Boss” Valastro and is tasked with recreating popular Italian heirloom dishes from the Valastro family vault. His two new projects – the recently opened Made.LV, a modern American tavern in Tivoli Village that will serve contemporary comfort food favorites, and Andiron Steak & Sea, a Thomas Schlesser-designed restaurant located in the shopping mecca Downtown Summerlin featuring all things grilled, roasted, shucked and seared – add to the eclectic mix of culinary offerings at the skilled hands of Canteenwalla.

Each month, chef and owner Patricio Sandoval invites a different chef to “think outside the tortilla” and create a taco inspired by their culinary or personal passions, which will be served in all Mercadito restaurants with a portion of proceeds going to Share Our Strength. Since its inception, Tacos for Strength has sold more than 5,000 tacos and raised thousands of dollars to benefit Share Our Strength.

Mercadito is open seven days a week.  Dinner and late-night dining: Mondays 3 – 10 p.m.; Tuesdays – Thursdays 3 p.m. to 11pm; Fridays 3 p.m. – midnight; Saturdays 11 a.m. – midnight; and Sundays 11 a.m. – 10 p.m. Mercadito brunch service is 11a.m. – 3 p.m. Saturday and Sunday.  Mercadito also offers two daily Happy Hours 3 – 6 p.m. daily and 8 – 10 p.m. Sunday and Monday; 9 – 11 p.m. Tuesday – Thursday; and 10 p.m. – midnight Friday and Saturday. Mercadito offers a variety of special promotions including: all-you-can-eat tacos for $24 every Sunday and Monday, 15 percent off for military members all day Monday, 30 percent off food and drinks for industry guests on Takeover Tuesdays, and the ultimate ladies night, Chicas Night Out, every Thursday evening.
