Chayo Mexican Kitchen + Tequila Bar, located at The LINQ, has introduced a new menu with an array of mouthwatering cocktails and food items.

New appetizer selections include savory rib eye nachos, priced at $19; a botana platter, which includes two mini sopes, two empanadas, two chicken gorditas and guacamole, priced at $18; and gorditas made with corn masa and stuffed with chicken, queso fresco, romaine and crema Mexicana, priced at $12. New seafood selections include shrimp tacos, topped with quajillo sauce and spring onions, priced at $18; and diablo shrimp, jumbo shrimp sautéed in quajillo sauce, Yukon potatoes and Brussels sprouts, priced at $26. Additional entrée options include pork enchiladas, made with cascabel chile sauce, toasted almonds, avocado and crema Mexicana, priced at $18; and the Mexico City Burrito, made with chicken or steak, black beans, cilantro rice, ranchero sauce and Oaxaca cheese, priced at $18.  For a side to share, guests can enjoy the tomato rice, priced at $5.

A variety of new cocktail selections include the white peach margarita, made with Patrón Silver Tequila, Nagomi white peach syrup, fresh sour mix and ripe cranberries; the skinny margarita, made with Campeón Silver Tequila, freshly squeezed lime juice, agave nectar and fresh blueberries; and the Mexican mojito, made with Campeón Tequila, St. Germain Liqueur, cucumber purée, agave nectar, grapefruit juice and fresh mint leaves, priced at $14 each.

The restaurant and bar will also feature a new list of both imported and craft beers, each priced at $7. New imported beers include Sam Smith Organic Chocolate Stout and Wyders Pear Cider, while new craft beers include New Belgium, Fat Tire, North Coast Scrimshaw, Sierra Nevada Pale Ale and Dogfish 90 Minute IPA.

Located just steps away from the Las Vegas Strip with direct access from The Quad Resort & Casino, Chayo is situated near the beginning of The LINQ corridor, which leads to the Las Vegas High Roller Observation Wheel, offering unobstructed views of the world’s largest observation wheel.
